Not only did the girls win, but the boys took the title as well! Talk about domination!

I can not express how proud and honored I am to have coached Solon girls track. It was beyond my expectations and am blessed to have had the experience. They are true champions on and off the track. I was impressed with how much class, work ethic, and unity the ladies and school displayed.

Leigh's visit & Coconut Chicken Spinach Salad

My good pal, Leigh, came to visit me last night! Wahooo!
As soon as we say "hi" the conversation does not end....into the night we chatted away over good food and wine.
First, though, I dragged her to track practice so she could help our Solon high jumper since Leigh jumped at ISU! -Thanks Leigh!

Dinner:
We share the same passion for wholesome food (she's a dietitian too...what do you expect), so for dinner we dished up fresh colorful spinach salads with all the fixins.

Gorgeous! Look at all the color aka nutrients. I love salads because they are such an easy way to fill up on nutrient dense foods.

Good dinner, good conversation.
Breakfast:
eggs seasoned with Fox Point (Penzeys spice)
Whole wheat fruit and nut bread from South Union Bakery (Des Moines)
w/ homemade rhubarb strawberry sauce
Strawberry Rhubarb Sauce is so simple to make. Just bring to a boil sliced rhubarb and strawberries. Add sugar to taste and simmer away till it reaches the consistency you desire.

she actually said she liked the "crunch" and instantly wanted to run 19miles but instead had to jump in her car and drive to Cleveland....dangit....next time Leigh!

Penzeys Spices - Breakfast Sausage

My sister, Kelli, introduced me to one of my new FAVORITE stores a couple weekends ago...drum roll please...

You will find ever combination of spice and herbs for every dish for every occasion!

I purchased some of their best sellers:
Italian Dressing- makes a wonderful homemade salad dressing with olive oil and vinaigrette
Fox Point- smells like butter :) so good on baked potatoes or asparagus
Black & Red- the wonderful gentleman helping me threw this one in for free!!! Yipeee!!! It's J's fav since it is SPICY!

Chicago- have not tried yet, but will make the PERFECT steak.
Breakfast Sausage- made turkey burgers/sausage with this....YUM! Typically, just ground turkey breast can be a little bland and need LOTS of flavoring, but just a few tsp of this spice made the most amazing sausage.

Add spice to meat and mix in. I also add a little to the tops of each sausage.
Add less/more for spicy preference.
Pan fry in olive oil on medium till cooked through.


ps...these spices make WONDERFUL gifts as well.
