these cakes were the cat's meow....I'm not kidding you...they tasted like almond cookies!

YUM YUM!
I always make a fruit sauce for pancakes so we can use less actual syrup. Boil down some frozen fruit (raspberries, strawberries, blueberries) and add a couple tablespoons of pure maple syrup. Now you have a flavorful fruit syrup with more health benefits!
mmmmm...almond cookies, I mean pancakes! J's huge masterpiece of a breakfast....remember, he is training for an Ironman :)
Good luck to my Solon track girls at Districts this Friday!

Until next time...
look good, feel good, do good
Sara- these look delicious! However, my one-year-old can't have nuts yet, so do you have any other alternative "pancake" ideas that you could point me towards? We LOVE pancakes in this house :) Thanks!!!! Katie
ReplyDeleteKatie,
ReplyDeleteSo of course there is the always yummy banana pancakes where you just add sliced bananas to the batter....so good topped with peanut butter. I also do apple slices (either in rings or diced). These are good topped with applesauce.
There are all kinds of different flours/grains you can experiment with however, I always use at least half whole wheat flour. See here for some ideas:

Buckwheat flour cakes are tasty!
Check out my pancake label for a "protein pancake" made with oatmeal.
Lastly, don't foget about those oh-so-good Mickey Mouse shaped cakes with chocolate chips :)
Hope that helps! Sara
